Healthy Oatmeal Pancakes

Ingredients

  • 1 cup oatmeal
  • 1 1/2 cups water
  • 5 egg whites
  • Cinnamon
  • Peanut Butter
  • 1 Banana
  • Honey or syrup

Instructions

  • Bring water to a boil in a medium saucepan. 
  • Stir in oatmeal and reduce heat to medium; cook for about 5 minutes stirring occasionally. 
  • Pour oatmeal into a medium bowl and add the egg whites. 
  • Mix until very well combined. 
  • Heat a skillet on medium heat and brush with oil or butter. 
  • Using a 1/4 measuring cup scoop oatmeal mixture onto heated skillet. 
  • Allow to cook for about 4 minutes or until pancake is golden brown and crispy. 
  • Flip and cook the other side for 4 minutes. 
  • Remove pancakes and spread with peanut butter, banana slices and honey or syrup.
