Bring water to a boil in a medium saucepan.
Stir in oatmeal and reduce heat to medium; cook for about 5 minutes stirring occasionally.
Pour oatmeal into a medium bowl and add the egg whites.
Mix until very well combined.
Heat a skillet on medium heat and brush with oil or butter.
Using a 1/4 measuring cup scoop oatmeal mixture onto heated skillet.
Allow to cook for about 4 minutes or until pancake is golden brown and crispy.
Flip and cook the other side for 4 minutes.
Remove pancakes and spread with peanut butter, banana slices and honey or syrup.
