What is it about a party bite that is so great? Is it the all in one flavor? The ease of popping them in your mouth? How beautiful they look on the table? Well, the good thing these stuffed mushrooms have all of those things!
The spring/summer entertaining season is coming up and I can’t help but start planning in my head. Stuffed mushrooms are one of my go-to party appetizers. They are easy to make, easy to eat, and can be crazy flavorful, which makes them the perfect party recipe. Most of the time I go straight to the crab to stuff my mushrooms but as I was pushing my cart through the grocery store I passed the smoked salmon. The idea popped into my head and I spent the next half hour scrolling through the store to find the other ingredients.
The smoked salmon provides a woodsy feel, the kalamata olives, Gouda cheese, and mushroom pair so well together. It tastes like a gourmet pizza, but it’s bite-sized! Good thing I only made one batch, or I would still be popping ’em in my mouth.
These can be stuffed ahead of time and kept in the refrigerator overnight. This can save time if making for a party; the day of just put them in the oven when ready.

Smoked Salmon and Gouda Stuffed Mushrooms
Ingredients
- 24 cremini mushrooms
- 3/4 cup shredded smoked salmon
- 1/3 cup finely chopped kalamata olives
- 2 teaspoons minced chives
- 1 cup finely shredded Gouda cheese
- 1 garlic clove, minced
- 1/2 teaspoon paprika
- 1/2 teaspoon lemon juice
Instructions
- Pre-heat oven to 350°
- Remove stems from all mushrooms.
- Add smoked salmon, olives, chives, garlic, paprika, and lemon juice into a medium bowl and stir until combined.
- Add cheese and stir until evenly combined.
- Take a small spoonful of stuffing and compact slightly with fingers; slide it off spoon into a mushroom.
- Push down on stuffing slightly to push it into the mushroom.
- Repeat until all mushrooms are filled.
- Line mushrooms on a baking sheet and place in oven.
- Bake for 15 minutes or until hot and cheese is melted.
