I have a confession to make, I love red meat and I may eat more than recommended. It is the first protein I gravitate to when thinking about dinner. My husband and I love to grill and it is usually a juicy steak, ribs or lamb. As much as I love all of those, I know that red meat can be unhealthy when consumed too much, safe to say how much I eat it is probably too much (but it’s soooo good am I right!?)
I consider myself to be a pretty decent eater; I limit my processed foods, try to keep my sugar intake down and believe that fresh is everything, but a balanced diet, errr maybe not so much. Since I have realized this, or more like finally accepted this I have decided to start incorporating two things into my diet more; fish and greens. Both have amazing benefits; salmon is a great source of protein and is packed full of those important omega fatty acids and greens with all the good for you vitamins.

In my efforts to eat more of those, this amazing flavor-packed salad was born. I have got to say, I will be incorporating this salad into my dinners all the time because it is so. damn. good.
I have always enjoyed using grilled peaches in recipes. They are so yummy of course but they are also so versatile. Enjoy them for a snack, or as a dessert with a scoop of ice cream or in a salad with savory flavors. If this is eating balanced, I am all in!

This salad has it all, the grilled salmon and peaches add that lovely char flavor. It is a great option for the summer when you don’t want to heat up the kitchen. The healthy refreshing greens, I used romaine but it would be delicious to use a mixture of spinach and kale.
The homemade roasted cashews add a crunch and it is all smothered in caesar dressing. This one of those salads that you want to get all ingredients in one bite because the combination is like a flavor bomb! Savory, salty, sweet, it’s all so good.
Salmon Caesar Salad with Grilled Peaches
Ingredients
- 8-12 oz. skinless salmon filet (cut into two even 4 – 6 ounce pieces)
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon garlic salt
- Sea Salt, to taste
- pepper, to taste
- 1 peach, cut in half and pitted
- 4-5 cups chopped lettuce (romaine, kale or spinach)
- Parmesan cheese for sprinkling
- 3-4 cup cashews
- 1 teaspoon olive oil
- 1 tablespoon breadcrumbs
- 1/4 teaspoon garlic salt
- 1/8 teaspoon cayenne pepper
- 1/8 teaspoon pepper
Instructions
- Season the salmon by sprinkling a generous amount of sea salt and cracked pepper over the salmon and the cayenne pepper and garlic salt.
- Heat grill to medium-high. Dip paper towel in olive oil and using kitchen tongs brush grill with oil.
- Once the grill is hot, add seasoned salmon. Cook salmon for 5 – 7 minutes on each side. Remove and set aside.
- Grill peach halves flesh down until grill marks are made and peach is warm. Remove from grill and cut into chunks.
- In a medium bowl, mix the olive oil and cashews until they are evenly coated.
- Sprinkle the breadcrumbs, garlic salt, cayenne pepper, pepper and toss until evenly coated.
- Spread onto a baking sheet lined with parchment paper and bake for 10 minutes, stirring every five minutes. Allow to cool before adding to the salad.
- In a large bowl add lettuce, cashews, peach chunks, and sprinkle with parmesan cheese. Toss salad with enough Caesar dressing to evenly coat the ingredients.
- Evenly divide mixture into two medium bowls and top each with one salmon fillet.
