These puff pastry baked eggs are perfect for those who want an easy, but flavor-packed breakfast. It only takes a few ingredients but those ingredients are good ones! And the best part is, you can add different flavors with the toppings.
These baked eggs are rustic, hearty, and truly so easy to make. This recipe involves using an oven-safe dish during baking that creates an indentation for the eggs. It’s like a flakey, pillow-like dish that is edible! After that, you simply bake the eggs in the puff pastry and move on to the toppings.
The toppings are where the fun is at! I chose to top mine with bacon bits, fresh parsley, and grated parmesan cheese. Every time I make these, I think I try different toppings. It’s always fun to play around with recipes and mix the flavors up.

When it comes to adding the toppings, you can either put them on to bake with the eggs; this is best with toppings like bacon, ham, chorizo, sausage, or mushrooms. Or you can put them on right when you take them out of the oven; this works best for toppings like herbs, spinach, and cheese.

Puff Pastry Baked Eggs
Ingredients
- 3-4 Slices bacon
- 1 Sheet Puff Pastry
- 1/4 Cup chopped parsley
- 4 eggs
Instructions
- Pre-heat oven to 350°. Line a baking sheet with parchment paper or a baking mat and set aside.
- Using a skillet, cook the bacon until crispy and break into bits.
- Turn puff pastry sheet onto a floured surface and lightly roll out with a rolling pin.
- Cut the puff pastry sheet into 4 squares; about 4″ each.
- Place squares on the baking sheet and place a small ramekin or oven-safe baking dish in the center of each square. If you do not have an oven-safe dish you can also use tin foil full of beans or rice.
- Bake for 6-7 minutes at 350° or until the sides have puffed up and the center is flattened.
- Remove from oven and crack an egg into the center of each puff pastry square.
- Bake for another 10-12 minutes until egg is set and white is completely cooked.
- Remove from the oven and sprinkle bacon bits and chopped parsley over the top.
