I’ve said it before and I’ll say it again. I love galettes. They always come out amazing and are a breeze to make. I am not over exaggerating here, the only failed galette I have had was my own fault. “Pro” tip: always put the dough on the pan before filling it. Galettes are easy to make but they are even easier to eat, you can literally eat them like a slice of pizza. It is literally a pizza pie. Doesn’t get much better than that.
Galettes can be filled with sweet or savory ingredients, I have yet to try a savory galette, but no worries it’s on the list! So let’s review; easy to make, easy to eat, versatile and oh yea freaking delicious! The story behind this recipe is pretty simple. A friend from work gave me some cherries from his yard and they were so fresh and bursting with flavor. Of course, the first thing that came to my mind was, baking! I love using fresh ingredients in my baked goods, the flavors come through so much and the guilt of eating more than I should isn’t as strong.
In addition to loving sweet baked goods, I love a mini size. Bite-sized to small, foods especially baked goods are so dang cute when they are mini! Since cherries are a smaller fruit they fit perfectly in these mini galettes.
Another great thing about galettes; I know, I know get a room right? You don’t have to worry about them looking perfect. They are a rustic treat that actually looks better with the little imperfections. That means, no stress in the kitchen! Cherries aren’t quite out of season yet, so these would be a perfect end of summer treat. But the almonds on the crust and the little bit of extract in the filling gives it a fall flavor. A scoop of ice cream on top or whipped cream adds a delightful finish.
Mini Cherry Almond Galettes
Ingredients
For the crust
- 1 1/2 cups pastry flour, you can use all purpose
- 1/4 cup sugar
- 1/4 teaspoon salt
- 1/2 cup cold butter; cubed
- 1/4 cup very cold water
- Egg white from one egg; for egg wash
- 1/2 cup sliced almonds
For the filling
- 2 cup pitted and halved cherries
- 2 tablespoon flour
- 1/4 teaspoon almond extract
- 3 tablespoons brown sugar
- 1/4 teaspoon cinnamon
Instructions
For the crust
- Whisk flour, sugar, and salt together in a medium bowl.
- Using a pastry cutter or two butter knives, cut in butter until the size of large grains of sand.
- Add half of the water and flake with a fork until flour mixture starts coming together. Add a little more water and mush together with your hands just until combined and you can bring into a ball. Do not over handle your dough.
- Turn on a floured board, divide into four, shape into balls and flatten into thick disks.
- Cover disks completely in flour. Place dough in the refrigerator.
- Preheat oven to 390°
For the filling
- Combine cherries, flour, and brown sugar into a medium bowl and stir until evenly covered.
- Add cinnamon and almond extract and stir until combined.
To assemble galette
- Remove dough from refrigerator and turn on a floured board. Roll each disk out to about 1/8 inch thick or an 8-10 inch circle.
- Transfer to a baking sheet lined with parchment paper or a baking mat.
- Spoon 1/4 of the cherry filling into the center of each circle leaving a 2-inch border.
- Carefully fold the edges over the filling.
- Brush dough with egg white and place sliced almonds on top.
- Bake galettes for 35 – 40 minutes or until golden brown.
- Remove from oven and allow to cool for five minutes.
- Serve with vanilla ice cream or whipped cream.
