Hi There! A few weeks ago I took to Instagram to ask you all what your favorite summer flavors are. It was one of the first sunny days of the year and I was dreaming about summer! I was also dreaming about cookies, madeleine cookies. My aunt gifted me a vintage madeleine pan for Christmas and it was finally time for me to create the perfect madeleine cookies.
I will be honest though, I had never made them before. They are one of my favorite cookies because they are soft, sweet but not too sweet and they pair lovely with a nice cup of tea. They have always seemed like a special treat to me, something I would enjoy at a bakery but not make myself. Well, that all changes now!
On that sunny day a few weeks back, I was coming out of the Portland winter fog and was totally inspired to create a madeline cookie that tastes just like summer.

There were so many good ones it was hard to choose, I wouldn’t be surprised if I end up making all the flavors because they were just that good, but…
I chose lemon lavender! When this idea came through I was immediately excited about it. For starters, I love lemon especially for summer time. An iced cold lemonade while soaking up the sun is a summer dream. Also, lavender can be that unexpected flavor that is delicious, especially paired with lemon.
There were a couple things that I really focused on when creating this cookies. A lemon flavor that was not too sweet and a lavender flavor that wasn’t too strong. Lavender can be very overpowering and so can lemon, so it was important to me to find that balance.
These cookies are soft with a subtle sweetness of lemon and lavender with a punch of lemon flavor from the glaze – pretty much summer in a cookie.

Lemon Lavendar Madeleine Cookies
Ingredients
For the Cookies
- 1/4 cup butter
- 2 eggs
- 3/4 teaspoon vanilla extract
- 1/8 teaspoon salt
- 1/3 cup sugar
- 1/2 cup flour
- 2 tablespoons dried lavender
- 2 teaspoons lemon zest
For the Glaze
- 1 cup powdered sugar
- 3-4 teaspoons heavy cream
- 2 tablespoon lemon juice
- food coloring or natural food dye - optional
Instructions
For the Cookies
- Heat oven to 375 degrees
- Brush the madeline cookie molds with butter and dust with flour
- Grind the lavendar with a mortar and pestle or chop finely with a knife
- Melt the butter and set aside to cool to room tempurature
- Sift the flour and lavendar into a medium bowl and set aside
- Beat the eggs on medium until frothy, about 2-3 minutes. Add the sugar and blend. Add the vanilla, salt and lemon zest and blend until smooth
- Using a silicone spatula, carefully fold in the flour mixture just until combine. Fold in the butter mixture until combined.
- Spoon the batter into the madeline molds until about 3/4 full.
- Bake for 12-15 minutes until the edges are golden brown and the cookie springs back when touched.
- Allow to cool for 5 miuntes before glazing.
For the Glaze
- Mix all the ingredients in a medium bowl. Transfer to a deep bowl or glass.
- Dip the cookies in the glaze. Allow excess to drip off and then place on a rack to slightly harden.
