Irish cream is one of those drinks that you only enjoy once in a while, but when you do, you remember how good it is. Each creamy sip is delicious and the flavor is sweet but the whiskey warms you. Pour some in hot chocolate, over ice or my favorite, in coffee as a creamer. It is perfect for these cold days when you really need to warm up.
Speaking of cold days, Portland has snow in the forecast for the next week. I guess I shouldn’t be surprised since it is still winter. We just usually do not have this much snow in the forecast this late in the year. Two weeks ago I would have said no thanks! I was ready for Spring but we had a little drizzling of snow and it brought back all the memories. Walking through the snow, going sledding and of course enjoying delicious hot drinks.
Now all I want is a snow day so I can make my coffee Irish and warm up while enjoying the snow. Maybe the snow gods are listening…we will see!
There are so many Irish cream flavors out there and I wanted to add one more. The combination of toffee and nutty flavor has been a favorite of mine for a while. I usually enjoy it during the holidays, check out my free ecookbook that includes an almond roca recipe.
It all starts with homemade toffee sauce which is so easy to make and oh.my.god so good! I found myself tasting the toffee sauce a little more than I needed to because it is so delicious. It wasn’t hard to create the nutty undertone since Irish cream already has that flavor but to add a little more I replaced the common vanilla extract with almond extract.
So only a few ingredients, a blender and a couple minutes and you will have yourself a creamy drink to sip on. Also, drizzle any extra toffee sauce over some ice cream and really have a ball!

Homemade Toffee Nut Irish cream
Ingredients
- 1 14 ounce sweetened condensed milk
- 1 cup heavy cream
- 1 cup Irish Whiskey
- 3 tablespoons toffee sauce (see recipe below)
- 1 teaspoon almond extract
- 1/2 teaspoon cocoa powder
Instructions
- Place all ingredients into a blender.
- Blend starting on low and increasing speed to medium until smooth.
- Pour into a glass jar and keep in the refrigerator for up to 2 months.
Toffee Sauce
Ingredients
- 1/4 cup butter
- 1/2 cup brown sugar
- 1/3 cup heavy cream
Instructions
- Melt the butter in a medium saucepan over medium heat.
- Mix in the sugar and heavy cream and bring to a boil.
- Reduce heat to medium and lightly boil stirring frequently until the sauce thickens and darkens; about 4-5 minutes.
