So, my husband, Tyler had a birthday was just a few weeks back. He chose to spend his birthday weekend at his family beach house in Cannon Beach. If you are ever in the pacific northwest, visit this sweet little shopping town.
The beach is our go-to vaca place, it is close and it is so refreshing for the soul. We spent two nights there and it really was one of the best trips to the beach we have had. The first night was just for us and the next night was with friends.
We spent the day walking on the beach, eating amazing food, and playing cards at this amazing bar Cannon Beach Hardware and Public House. Yup, it’s a hardware store and a bar with a catchphrase of “screw & brew”. Only in Oregon. The weekend was full of those moments that if you could slow down time and soak it in just a little more, you totally would.
We ended our first day with a delicious dinner and of course some celebratory drinks. What is your go-to drink? Mine is whiskey with a splash of ginger ale. Yum! After a few drinks, we ended the night sitting by the fire with me reading a random book we found at the beach house. I am not joking lol. After finally stumbling to bed, I was just about to fall asleep when I hear…
“Salmon spread!”
Surprisingly I knew exactly what he was talking about. There is a gem (one of many) in Cannon Beach that has the best salmon spread. It’s a small coffee shop, Sleepy Monk Roasters. The coffee is amazing, the vibe is super cool and the salmon spread is to die for! I assured him that we would get some first thing in the morning and I fell asleep counting how many bagels with salmon spread I could eat.
In the morning we promptly got ready and headed towards the two things that would shave the edge off the hangover. Coffee and salmon spread. As we approached I wondered why the inside looked so dark…you guessed it. The place was closed for maintenance and would open back up the day after we were planning to leave. What kind of cruel joke?! We both lost our sh*t for a hot minute and drove further into town to find another sweet coffee shop with really good coffee.
But we wanted that salmon spread.
Ever since then, I couldn’t stop thinking about it. The last day at the beach consisted of great times with friends and random outbursts of…
“I can’t believe Sleepy Monk was closed!”
We returned home and salmon spread on the mind. I had to recreate it. Luckily, it doesn’t take too many ingredients to make this tasty spread so I dove in and tried my best to recreate it. I don’t know if it tastes exactly like theirs but it is still really damn good.
It has chunks of smoked salmon, a zing of lemon juice, and fresh dill. Spread it on your morning bagel or set it out with cracker or bruschetta on your next buffet table.
