Well, I am at it again folks, I have turned something that is delicious, decadent and perfect into a mini version. I can’t get enough of mini eats, sweet and savory. I don’t know what it is, maybe its because mini foods are so damn cute or maybe it’s because they are easier to eat. Let’s be honest, it’s the latter.
Well, these are definitely pop in your mouth delicious. Dangerous too, you know those treats that next thing you know you’ve eaten all of them? Yea these are it. Side note, I did that the other day with a box of thin mints. Yea, its Girl Scout season again. I wasn’t mad about it though, they were delicious.
Anyways, beignets are one of those desserts that can be enjoyed in the morning and in the evening. Slap some jam on that beignet and you’ve got yourself breakfast. Pour powdered sugar over it and you’ve got dessert. Make a savory version and you’ve got lunch (I don’t know if savory beignets are a thing but they should be). Basically you’ve got a balanced day of meals here. Okay, that is not true at all but what you’ve got is a delicious treat that can and should be enjoyed at any time of the day
What is better than a fluffy beignet that is covered in powdered sugar? When it is mini and you don’t need anything fancy to eat it. All you need are your hands to dip it in sugar and pop in your mouth. I call them Min Bins and they will change your life.
Easy to make and easy to enjoy! These Min Bins would be perfect for a fun treat or on the breakfast bar at your next brunch party.

Mini Beignets
Ingredients
- 1 teaspoon active dry yeast
- 3/4 cup warm water
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1 large egg, lightly beaten
- 1 teaspoon vanilla extract
- 1/2 cup evaporated milk
- 3 1/2 cups flour
- 2 tablespoons shortening
- Canola oil for frying
Instructions
- Pour the water into a large bowl and sprinkle the dry yeast over. Stir to dissolve and let stand for 5 minutes until foamy.
- Beat in the sugar, salt, egg, vanilla extract, and evaporated milk. Add half of the flour and beat until combined. Beat in the shortening and then gradually add the rest of the flour.
- Cover in plastic wrap and place in the refrigerator for at least two hours and up to 24 hours.
- Place the dough on a floured surface and roll out to 1/4 inch thick. Cut into 1 1/2 inch squares.
- Heat 3 to 4 inches of oil in a large deep bottom saucepan or dutch oven to 365 degrees.
- Using tongs, add the beignets, 5-6 at a time and fry for 1 minute, flip with the tongs and fry for another minute. The beignets are done when they are lightly browned on each side.
- Remove beignets and place on a paper towels to drain. Sprinkle with powdered sugar or enjoy with jam.

I LOVE beignets! My husband’s family always makes them when we visit…in Senegal, so I don’t get them very often. This recipe looks totally doable and I can’t wait to try making these myself! I’m sure he’ll be happy for a taste of home.
