This summer in Portland has been a hot one. We usually get a pretty beautiful summer with warm weather and some hot days sprinkled in. We do not usually get weeks of 90-degree weather. I am not used to this! I try not to complain because let’s face it Portland doesn’t have the nicest weather the other nine months of the year, but 90+ is a bit much for me. My go-to tactics to beat the heat, AC and cold treats.
I have always loved creamsicles. Ever since I was a kid and the teacher would hand out a treat, my hand would always reach for that orange creamsicle over any popsicle, no offense popsicles, I love you too. But, seriously do you remember those orange creamsicle treats with the wooden spoon in the lid? I loved those! Anyways, I am the same way as an adult, but now I am making my own creamsicles and there is no teacher telling me I can only have one. It was a particularly hot day couple weekends back and I had creamsicles on the mind. A nice cold snack that I don’t have to feel bad about eating one, or three, whatever. As I was walking around the grocery store, mixing flavors in my head it occurred to me that Labor Day is right around the corner. I already had the white cream, I just needed the red and blue. Raspberries and blueberries made the perfect patriotic combination and the flavors mix so well together. In addition to the flavors, the colors are amazing. The cream and raspberries are layered to make a swirl effect. The bright red is almost too pretty to eat…I said almost.
When I made my blackberry honey creamsicles last summer I used paper cups which was so easy and inexpensive. This time around I used a popsicle mold. Either way is very easy, but if you want to save a buck and don’t plan on making creamsicles all summer like me (seriously, I have already made these twice, I am obsessed!) the paper cup route is the way to go.
Although you need a little time to freeze these delicious treats they are really easy to make. Once you blend the raspberries and honey together and chop the blueberries, you are ready to freeze. Easy peasy, right? These are rich and creamy, perfectly sweet from the honey and have a slight tartness from the raspberries. Make these to cool down during those hot summer days or of course, make them for a party! Backyard bbq, anyone?
Homemade Berry Filled Creamsicles
Ingredients
- 2 cups fresh raspberries
- 3/4 cup fresh blueberries
- 3 tablespoons honey + 1 tablespoon
- 1 1/2 cups whipping cream
- Popsicle molds or paper cups and craft sticks
Instructions
- Add raspberries and honey into a blender and blend until smooth.
- Alternate pouring cream and raspberry mixture into popsicle molds until you have about an inch left at the top.
- Place mold in the freezer for about 30 minutes or until the top is just starting to freeze.
- Chop blueberries into small chunks and toss them in a tablespoon of honey until evenly coated.
- Spoon blueberries on the top of the creamsicles and push down slightly until blueberries have sunk into the cream just a little.
- Place back into the freezer for at least 5 hours or overnight.
- When removing from mold, run under warm water until you can carefully wiggle the creamsicle out.
