Breakfast truly is the most important meal of the day. And I love breakfast foods but I am not the best at eating a decent breakfast throughout the week. I tend to get busy during my weekend and meal prepping gets thrown to the wayside. Easy, healthy options are what I need. Something that I can make for Sunday breakfast and use the leftovers all week. These oatmeal protein pancakes are my answer!
This recipe came from a friend of mine, Mae. She works at the Athletic Centers with me and happens to be a trainer, so she knows what she’s talking about when it comes to healthy options. She came over and showed me her go-to breakfast and I was amazed at how easy and delicious they are! Oatmeal, eggs, and cinnamon are all you need to make these scrumptious cakes. This recipe makes a small batch, but you can double it for a bigger batch.
Egg whites pack these pancakes full of protein and with no sugar added these are a great way to start your day; no mid-morning crash, something that I am far too familiar with. Probably the best part of these pancakes, are the toppings! Peanut butter, bananas, and honey are Mae’s go-to toppings which are so good. This combination compliments the oatmeal and cinnamon so well. The great thing about toppings is you can try so many different combinations. Time to get creative! Try strawberries and whipped cream, jams, nuts and syrup or chocolate chips. Isn’t it great when a healthy dish tastes good!?

Healthy Oatmeal Pancakes
Ingredients
- 1 cup oatmeal
- 1 1/2 cups water
- 5 egg whites
- Cinnamon
- Peanut Butter
- 1 Banana
- Honey or syrup
Instructions
- Bring water to a boil in a medium saucepan.
- Stir in oatmeal and reduce heat to medium; cook for about 5 minutes stirring occasionally.
- Pour oatmeal into a medium bowl and add the egg whites.
- Mix until very well combined.
- Heat a skillet on medium heat and brush with oil or butter.
- Using a 1/4 measuring cup scoop oatmeal mixture onto heated skillet.
- Allow to cook for about 4 minutes or until pancake is golden brown and crispy.
- Flip and cook the other side for 4 minutes.
- Remove pancakes and spread with peanut butter, banana slices and honey or syrup.
