My husband and I love to eat out. It is our way of sharing that passion for food and getting inspired to try new dishes at home. Before I met him, I wasn’t much of an adventures eater. He would push me and still does to try new things.
One time we were dining at one of our favorite restaurants, Seasons & Regions (If you live in the Portland area, go to this restaurant!) and he gently pushed me to try fried oysters. That is when my opinion on oysters drastically changed. They were delicious and I was hooked!
After several trips back to enjoy the oysters, recreating the recipe had to be done so I can enjoy them any time I would like. These fried oysters are perfect for brunch with a mimosa or two, or a romantic dinner.
The oysters soak in a buttermilk and hot sauce bath to infused some spicy flavor right into the oysters. Breaded in a light and flaky breading seasoned with old bay, cayenne pepper, and dill weed. Dipped into an easy to make, creamy dill dipping sauce. Uh yum!
Fried Oysters with Dill Dipping Sauce
Ingredients
For the fried oysters
- 8-10 small oysters
- 3 cups buttermilk
- 1/2 teaspoon hot sauce
- 1 1/2 cups flour
- 1 tablespoon Old Bay Seasoning
- 1 teaspoon cayenne pepper
- 1/2 teaspoon dill weed
- 1/8 teaspoon pepper
- Dash of salt
- Canola oil for frying
For dill dipping sauce
- 1/2 cup mayonnaise
- 1 1/2 teaspoon lemon juice
- 1 teaspoon minced fresh dill
- dash of cayenne pepper
Instructions
For the fried oysters
- Pour buttermilk into a large bowl and add hot sauce, stir until combined. Add oysters and stir to coat oysters.
- Place bowl in the refrigerator and allow to soak for at least an hour.
- After oysters have soaked take them out of the refrigerator and set aside while you prepare the breading.
- Pour oil into a large cast iron pot or Dutch oven until it is about two inches deep and heat to 350°.
- In a medium bowl add flour, old bay seasoning, cayenne pepper, dill weed, pepper, and salt; toss until combined.
- Take two spoonfuls of buttermilk, pour into flour mixture and toss. This will provide texture.
- When oil is heated take oysters from buttermilk letting excess drip off and coat in flour mixture.
- Carefully place oysters into oil, you can fry 3-4 at a time.
- Fry oysters until they are golden brown; about 3-4 minutes.
- Take oysters out and place on a paper towel to soak up any excess oil.
- Serve hot with dill dipping sauce.
For the dill dipping sauce
- Mix all ingredients together and serve chilled.
