Okay, so remember a while back when I posted about my family open-faced crab burger recipe? Ya know, the one with flavorful salty crab, crunchy bacon, and melty cheese that all sits on a toasted bun…and now I am hungry. Anyways, it is one of my favorite recipes and I often try to find an excuse to make it. I had a craving a couple weeks back and planned to make it for dinner, the only problem…I was feeling carbed out. Don’t get me wrong, I love bread, maybe a little too much (seriously, I eat enough bread for all of us) but lately I have been making an effort to cut bread out where I can.
This gave me a chance to play around with this recipe which is something I love to do, so I started brainstorming and then it came to me! Take the tomato which is usually sliced and laid on top and use that as the vessel. It worked exactly the way I planned and was one of the easiest recipes to make.
I wanted to keep the toppings the same as the original recipe because well…it’s bacon and cheese. Need I say more? Instead of using full strips of bacon I made bacon bits and sprinkled them on the top, covered with cheese.
Depending on the size of the tomatoes will result in how many you can make. I used two large tomatoes, but you could use medium sized and make four or even smaller and make several bite-sized ones that would be perfect finger food for a party. Easy & Delicious Crab Stuffed Tomatoes
Ingredients
- 3/4 cup flaked crab meat
- 1/4 cup diced celery
- 2 tablespoons grated onion
- 1/3 cup grated cheddar cheese and extra for topping
- 1/3 cup mayonnaise
- Dash of salt
- 2 large tomatoes
- 3 strips of bacon
Instructions
- Pre-heat oven to 350°
- Take tomatoes and cut a circle on the top and remove.
- Use a spoon and hollow out the tomato.
- Place hollowed tomatoes upside down on a plate to allow liquid to drain.
- Cook bacon and break into bits, set aside.
- Mix crab, celery, onion, 1/3 cup cheddar cheese, mayonnaise, and salt together in a medium bowl.
- Place tomatoes in a baking dish and stuff with crab mixture.
- Bake tomatoes for 20 minutes or until a fork stuck in the middle comes out warm.
- Remove tomatoes from oven and sprinkle with bacon bits and cheese.
- Broil on low until cheese is melted.
