Next week is my six year wedding anniversary. Holy crap! I cannot believe that it has already been that long! I feel so lucky to be married to my husband and I am so proud of how dedicated we are to each other. We were engaged for a year and a half; I, of course, needed plenty of time to plan the wedding but I remember being so impatient to get married. I just wanted to be married to him already! Now we are six years in and before I know we will be celebrating ten. Time really does fly when you are having fun. In addition to marrying the love of my life, my wedding was very special to me because it really showed that I love to plan a good party and that I am pretty dang good at it.
It feels like yesterday that I was picking out a venue, decor, and a menu. When I was planning my wedding, there were two things that were really important to us. The venue and the food. I wanted an outdoor ceremony (that’s the pacific northwest gal in me) and a venue that had an amazing porch so my guest could enjoy the summer night air. My husband and I are foodies (surprising, right?) and we put a lot of thought into our menu and it was worth it. One of my favorite appetizers from our cocktail hour was crudité cups with a delicious aioli. Although I didn’t get to eat much of it on the day of (all my married peeps know how that is) I remember it being one of my favorite choices during the tasting.
Since my wedding, I have wanted to recreate this appetizer. It’s so simple but packed full of flavors. The fresh veggies are refreshing on a summer evening and the lemon herb aioli is a punch of flavor. Plus, look how beautiful they look! They look elegant enough for a bigger event but easy to make for a simple backyard party. All those bright colors, this sweet little cup is sure to bring a pop to the buffet table. It is also a great healthy choice for your guests, they will feel good about getting some of their daily veggies.
I used mason jars for a more casual look, but any short glass or plastic cup will do the job. Depending on the height or your cup, a small fork or tongs can be helpful for your guests to enjoy.
Crudite Cups with Lemon Aioli
Ingredients
For the aioli
- 1 cup mayonnaise
- 2 tablespoons lemon juice
- 2 tablespoons finely chopped parsley
- Salt & Pepper to taste
For the crudite cups
- 4 plastic or glass cups
- 4 appetizer picks
- 4 Romaine lettuce leaves
- 1 red bell pepper
- 1 yellow bell pepper
- 3 pickling cucumbers
- 12-15 snap peas
- 12 grape tomatoes
Instructions
For the aioli
- In a medium bowl, add mayonnaise, lemon juice, parsley, and dill and stir until combined.
- Add salt and pepper to taste and stir until smooth.
For the crudite cups
- Using a spoon carefully add 1/4 cup of the aioli to the bottom of the cups.
- Trim the romaine leaf bottom off so it sits flat in the cup. Add the leaf into the cup pressed against the side of the cup.
- Chop the bell peppers and pickling cucumbers into small strips. Layer them in the cups along with the peas.
- Spear three grape tomatoes on the appetizer picks and add in. Serve soon after assembly.
