Wow. It is really November. I find myself saying “time is flying” far too often. When time seems to fly, it gives me anxiety. Although I am so excited for the holidays, it feels like I was just enjoying the summer weather and bam! now I am ordering my turkey.
I shared earlier this week with my newsletter subscribers a little bit of my story about moving to a homestead. It truly has changed my life and I am more inspired than ever to create a life that is slower, simpler and full of the things I love to do. Time will always seem to fly by, I think but it is my mission to fill it with more meaningful moments that slow it down a bit.
So on that note, I spent a Sunday in the kitchen, listening to podcasts and creating these baked apples. It was so nice to take the day to bake; something I love to do and not worry about all the other things I had to do. Okay, I may have worried a little but only worrying a little is pretty good for me : )
These baked apples are stuffed with chopped pear and apple, brown sugar and those classic fall spices. They are so good, you guys! With the toasted graham cracker crumble, dollop of vanilla ice cream and drizzled with caramel sauce, you will be in heaven. Full blown fall heaven. That is what I really love about this recipe, it is fall in a bowl…or well, an apple!

Baked Apples with Graham Cracker Crumble
Ingredients
- 4 large apples (I used Honey Crisp)
- 1 pear
- 3 tablespoons flour
- 4 tablespoons packed brown sugar
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1 cup crumbled graham crackers (from about 6 graham crackers)
- 1/4 teaspoon cinnamon
- 3 tablespoons butter, melted and cooled
- 1/4 cup water
- Vanilla Ice Cream for topping - optional
- Caramel Sauce for topping - optional
Caramel Sauce
- 1 cup packed light brown sugar
- 4 tablespoons salted butter
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350 degrees
- Using a pairing knife or an apple corer, remove the stems and seeds from the apples creating a large hole where the filling will go.
- Chop the apple that you removed to make the hole in small cubes. Peal the pear and chop into small cubes and place in a medium bowl with the apple.
- Add the flour, brown sugar, nutmeg and salt to the pear and apple and mix until combined.
- Using a spoon, fill the apples evenly with the apple/pear mixture.
- In a medium bowl, crush the graham crackers. You can also place the crackers in a zip lock bag and crush.
- Add the cinnamon and mix until combined. Pour the melted butter over while mixing to evenly coat.
- Using a spoon, carefully top the apples with graham cracker crumble. Don't worry if you feel like a lot is falling off, you should still be able to top with plenty of crumble.
- Place the apples in a large baking dish and add the water to the bottom of the dish.
- Bake for 40-45 minutes or until the apples are tender when pierced with a knife. Remove from the oven and allow too cool for a few minutes.
- While the apples are baking, make the caramel sauce. In a medium sauce pan add the sugar, butter and heavy cream and heat over medium-low whisking gently until it starts to thicken. About 5-7 minutes.
- Add the vanilla extract and continue to cook for another minute to thicken further. Remove from heat and cool slightly. Pour the sauce into a jar and place in the refrigerator until apples are done.
- Once apples are cooled, top with vanilla ice cream and caramel sauce. Enjoy!
