An apple galette with maple and crispy apples all tucked into a delicious, salty-sweet browed crust. This galette is an easy to make baked treat that you can enjoy from summer until fall. Serve with a scoop of vanilla ice cream or whipped cream and drizzle with maple syrup to top it off.

I am a big fan of galettes lately. I made my first one a couple of months ago, a Rhubarb Raspberry Galette, and I fell in love! Galettes are everything pie is but without the fuss, the dough is easy to work with and it doesn’t take long to make one. Galettes are like pie’s cool cousins that so much easier to deal with. Don’t worry, pie, you will always have a special place in my heart.
Ever since my first galette came out a success, I have been dreaming of all the flavors I want to try. Savory to sweet and everything in between. I think it is safe to say that you can expect a few more galettes from me in the future…okay maybe more than just a few.
Since we are in the thick of summer and fall only a couple months away (holy crap, I just got really excited for fall!) I decided to use one of my favorite summer/fall flavors, the apple.
Apples have so many different variations and go with so many other flavors of the seasons. One minute you are enjoying a sweet apple pie while watching the fireworks and the next minute you are enjoying a crisp fall day with a spicy apple treat.
This galette mixes honey crisp apples with the classic spices and maple syrup. Yea, you read that right. The syrup gives it a little extra sweetness and adds a hint of that mapley flavor. Drizzle a little over the top and call it breakfast!
Just like pies, you can make beautiful designs in your galette. I used an apple, corer, slicer, and peeler, (If you don’t have one, get one, they are the best!) to cut the apples into thin circles. I then cut them in half and layered the apples on top of each other to create long rows.
Apple Maple Galette
Ingredients
For the crust
- 1 1/2 cups pastry flour, you may use all purpose
- 1/4 cup sugar
- 1/4 teaspoon salt
- 1/2 cup cold butter; cubed
- 1/4 cup very cold water
For the filling
- 4 medium apples, peeled, cored, sliced and cut in half
- 1/2 cup sugar
- 3 teaspoons flour
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cinnamon
- 1 teaspoon maple syrup
Instructions
For the crust
- Whisk flour, sugar, and salt together in a medium bowl.
- Using a pastry cutter or two butter knives, cut in butter until the size of large grains of sand.
- Add half of the water and flake with a fork until flour mixture starts coming together. Add a little more water and mush together with your hands just until combined and you can bring into a ball. Do not over handle your dough.
- Turn on a floured board, shape into a ball and flatten into a disk.
- Cover disk completely in flour. Place dough in the refrigerator.
- Preheat oven to 390°
For the filling
- Combine apples, sugar, and flour and stir until evenly covered.
- Add nutmeg, cinnamon, and maple syrup and stir until combined.
To assemble galette
- Remove dough from refrigerator and turn on a floured board. Roll the dough out to about 1/8 inch thick.
- Fold dough in half and transfer to a baking sheet lined with parchment paper or a baking mat.
- Lay apples in rows one slice slightly on top of the other in the center of the dough leaving 2-3 inch border. You can also slowly pour apple filling into the center of the dough.
- Carefully fold the edges over the filling. Brush crust with egg white.
- Bake galette for 35 – 40 minutes or until golden brown.
- Remove from oven and allow to cool for five minutes.
- Serve with vanilla ice cream or whipped cream.
