These blackberry honey creamsicles are made easy with fresh berries and inexpensive by using paper cups and popsicle sticks. A perfect dessert for a summer party or just a cool treat for the end of a warm summer day. This sweet treat is sure to be a crowd pleaser among both adults and kids.

It is already mid-August…sigh. Summer is almost over and fall is right around the corner and although I love fall and have had autumn dreams swirling in my head since July I still love Summer. I am a big believer in being in the moment, or should I say the season. When a season is almost over I try to experience it to its fullest before it is gone.
One of the ways I do this is by (surprise, surprise) eating seasonal foods! Creamsicles are delicious in the summer. They are easy to make, made with blackberries, the best summer berry (in my opinion) and they are cool on a warm day. I enjoy blackberries especially for a summer treat, ice cream, milkshake, Italian soda, whatever it may be you can’t go wrong with that sweet flavor.
These are easy to make but do take at least 5 hours to freeze so I suggest making these the day before. The good thing is it takes less than 30 minutes to prepare and get in the freezer.
What you’ll need
- Blackberries (the fresher the better!)
- Honey
- Water
- Whipping Cream
- Medium paper cups
- Popsicle sticks
- Clothespins
The process is very easy, it starts with a blackberry and honey reduction, these flavors go hand in hand and create a strong but not overwhelming sweetness. Once cooled, lightly mixed with the whipping cream. When adding reduction to the whipping cream do not stir, this will provide a slightly marbled look.
These creamsicles can certainly be made with a popsicle mold if you are going for that classic look but using paper cups (I got mine from the dollar tree) saves money and you don’t have to find a place to store the molds.
I filled the cups about halfway with the mixture, but you could go bigger if you choose. Put the popsicle sticks in so that they are more than halfway but not touching the bottom. Use two clothespins to clip on the popsicle stick to hold in place.
Put in the freezer and allow to freeze for at least 5 hours or overnight. That’s it! Super easy, the hardest part is waiting for them to freeze! Once you are ready to serve, cut a slit in the cup and tear the cup off. Serve immediately or on a tray of ice if you are throwing a party.
These were exactly what I needed to enjoy the summer and make use of the glorious blackberry. I suggest taking a berry picking trip and making these with the berries. Blackberry Honey Creamsicles
Ingredients
- 2 cups chopped blackberries
- 2 tablespoons honey
- 1 cup water
- 2 cups whipping cream
- Medium sized paper cups
- Popsicle sticks
- Clothes pins
Instructions
- Chop blackberries and place in medium saucepan; add any juice from chopping.
- Add honey and water.
- Simmer on medium heat until reduced to half; about 5 minutes.
- Remove juice mixture from heat and place in medium bowl; let cool completely.
- Add cream, do not mix.
- Pour mixture into paper cups until 3/4 full.
- Place popsicle sticks into filled cups until the stick is halfway in.
- Use two clothespins to pin popsicle stick from each side to keep from sinking or falling.
- Place in freezer and allow to freeze for at least 5 hours.
